Zucchini Tart
Perfect for a quick meal, brunch, or picnics.

Peel and chop the onion. Rinse the zucchini and cut them into rounds, then quarter the rounds. Heat the olive oil in a large skillet and sauté the vegetables with the thyme over high heat for 7–8 minutes. Season with salt and pepper, stir, and let cool slightly.

Mix the goat cheese with the yogurt, then add the eggs, salt, and pepper. Stir in the zucchini-onion mixture. Set aside.
Unroll the pie crust and line a tart pan with high sides (about 9 inches/23 cm in diameter). Preheat the oven to 350°F (180°C). Spread a heaping tablespoon of whole grain mustard over the crust. - 3
Add the zucchini and cheese mixture. Sprinkle with sliced almonds and grated Parmesan. Bake for 40 minutes.
