Ingredients

Serves 4 servings
  • 2 cupsleftover rice (about 400 grams)
  • 1onion, chopped
  • 2-3green chilies, chopped
  • Salt, to taste
  • 4-5 teaspoonschickpea flour (besan)
  • 1 teaspoonturmeric powder
  • 1/2 teaspoonred chili powder
  • 3-4 teaspoonswater
  • Oil, as needed for frying

    Chop the onion and green chilies. You can also add your favorite vegetables if you like, but I haven’t added any here.

    Place the leftover rice in a bowl and break up any clumps. Add turmeric, salt, red chili powder, chopped green chilies, chopped onion, and chickpea flour. Mash and mix everything together well with your hands.

    If needed for binding, add 2 to 3 teaspoons of water. Shape the mixture into cutlets in your preferred shape. Prepare all the cutlets in the same way.

    Heat oil in a deep pan or skillet. Fry the cutlets until they are golden and crispy.

    Fry all the cutlets until they are nicely crispy, then remove from the oil and turn off the heat.
