I made this brown rice with the vegetables I found in the fridge. I like adding vegetables to rice because they give it color and flavor. Of course, you can use regular rice too. Use your favorite kind of rice.

I made this brown rice with the vegetables I found in the fridge. I like adding vegetables to rice because they give it color and flavor. Of course, you can use regular rice too. Use your favorite kind of rice.

Rinse the blood sausages under cold water. Place them on a baking sheet and use a toothpick to poke 3 holes in each sausage. Bake at 350°F (176°C) for about 45 minutes. Rinse the brown rice under cold water.

In a small pot, heat the oil. Sauté the onion, garlic, and vegetables together.

Add the rice, parsley, salt, and water. Bring to a boil, then reduce the heat, cover, and simmer for about 35 minutes or until the rice is tender and the liquid is absorbed.

To serve, place a bed of rice on each plate. Slice the blood sausages and arrange them on top of the rice. Fry an egg to serve on the side.
