Tinga is a traditional Mexican dish made with shredded meat (chicken, pork, or beef) in a sauce of tomatoes, onions, garlic, and chipotle chile. It's usually served on tostadas, tacos, quesadillas, or molotes, and topped with avocado and queso fresco.

Wash the tomatoes and roast them in a skillet along with the garlic, guajillo chile, and pasilla chile.

After roasting, you can add some of the chicken breast cooking broth. Let it simmer for 10 minutes.

Blend all the ingredients together.

In a skillet, sauté the onions with a little pork lard (or use regular butter if you prefer).

Add the blended mixture and the shredded chicken to the skillet.

Prepare guacamole and assemble your tostadas with sour cream and queso fresco.
