In a large bowl, combine the flour, sugar, and yeast.

Make a well in the center and add the eggs, shortening, vanilla extract, and 1 cup of warm water. Mix until the shortening is dissolved, then add the remaining water.

Knead until you have a smooth, elastic dough that doesn't stick to your hands, about 15 minutes.

Grease a large bowl, place the dough inside, and cover with a kitchen towel. Let it rise until it doubles in size.

On a floured surface, roll out the dough with a rolling pin. Cut out circles and make a hole in the center of each donut.

Sprinkle flour on a tray and place the donuts on it. Cover with a kitchen towel and let them rise until doubled in size, about 1 hour.

Heat the oil to 350°F (180°C). Fry the donuts for 3 minutes on each side. Remove from the oil and place on paper towels. While still warm, coat with sugar.
