Ingredients

4-6 people
  1. Chicken
  2. 2 lbschicken thighs
  3. 1 tbspgarlic ginger paste
  4. 1/2 tspturmeric
  5. 1/4 tspcinnamon
  6. 1/2 tspcayenne
  7. 2 tspcoriander powder
  8. 1 tbspcumin
  9. 1 tbsppaprika
  10. 1/2 tspblack pepper
  11. 1 tspsalt
  12. Juice from 1/2 lemon
  13. Rice
  14. 3 cupshot water
  15. 1 1/2 cupbasmati rice
  16. 1 1/2Maggi cube
  17. 1 tspcumin
  18. 1/4yellow onion, chopped
  19. 1bay leaf
  20. 2cloves
  21. 4cardamom pods
  22. White Sauce
  23. 1/4 cupMayo
  24. 1/2 cupplain Greek yogurt
  25. 2 tsplemon juice
  26. 1 tbspwhite vinegar
  27. 1/2 tspblack pepper
  28. 1/2 tspsalt
  29. Water to thin
  30. Green Sauce
  31. 1/2 cupplain Greek yogurt
  32. 1jalapeño
  33. 2-3garlic cloves
  34. 1/2 cupcilantro
  35. 1 tbsplemon juice
  36. Salt, to taste

Cooking Instructions

    Dice chicken and season with all ingredients and let marinate for at least 1 hour

  2. 2

    Once chicken is marinated, add olive oil to skillet and cook all the way through

  3. 3

    While chicken is cooking, make your rice by adding onion to pot

  4. 4

    Once onion is sautéed, add in bay leaf, cloves, and cardamom pods and let toast for 2-3 minutes

  5. 5

    Add in rice and let toast for another 2-3 minutes

  6. 6

    Combine hot water with Maggi cube and cumin then add to rice

  7. 7

    Once water starts to boil, cover and reduce heat to low and cook for 15 minutes

  8. 8

    Once rice is cooked, remove from heat and fluff up rice

  9. 9

    Make white sauce by combining all ingredients

  10. 10

    Make green sauce by blending all ingredients

  11. 11

    Serve chicken over rice with cucumber and tomato and top with white and green sauce
