Ingredients

  • 1 cupwhole urad dal, skin removed
  • 1green chili, chopped
  • 1/2 cuprice flour
  • 1 teaspoonginger, grated
  • 1/4 cupcoriander stem with leaves, finely chopped
  • 1/4 cupcurry leaves, finely chopped
  • Pinchasafetida
  • 2 tablespoonsspice mix (cumin, pepper, and cumin powders)
  • 1 cupsmall coconut pieces
  • 1/2 teaspoonbaking powder
  • as neededSalt
  • As neededoil for frying

    Make a checklist. Keep the necessary items near the cooking area

    Soak the urad dal in a bowl with 5 cups of water for 3 hours. Then drain it, add water little by little in an idli grinder, grind urad with ginger and green chilies. Make a soft silky dough. It should be a little thick. Add rice flour, ginger spice mix, baking powder, salt, coconut pieces, chopped coriandercandurry leaves. Mix them together.

    Heat oil in a kadai over medium heat, make small lime size balls with 1/4 cup bar.tter. When oil is hot enough drop the bpndos one by one into the oil. I usually place the bonda on a spoon and slide it intp into the oil. You will see bubbles in the oil. Turn it every now and then with a spoon. It should cook well all over. It should be golden brown. It will be cooked in 3-4 minutes. Take it out and drain the oil. Place it on a paper towel.

    Crispy, delicious and nutritious Bonda is ready, I could make 10 Bondas. Taste it. Serve with chutney of your choice or ketchup. Enjoy
