Cook the fries: shallow fry the chips until 80% done. Season the warm fries: mix olive oil/ butter with garlic paste, green chili paste. Toss warm fries in this mix along with salt, black pepper powder and herbs mix gently.

Make the Peri Peri drizzle:in a small bowl, combine Peri Peri masala powder, olive oil/ butter, lemon juice, honey and ketchup/ chili sauce mix well. Assemble the skewers: Thread seasoned chips, onion chunks, bell pepper chunks, tomato chunks / cherry tomato cut into halves or whole onto skewers.

Brush Peri sauce first, then cheese: Brush/ drizzle Peri Peri sauce over the skewers generously. Sprinkle grated/ chopped thin slices of mozzarella cheese on top so it melts over the sauce layer. Bake & serve: bake at 200°c for 8-10 minutes or grill until cheese melts and turns lightly golden. Garnish & serve: garnish with parsley and serve hot with Peri drizzle.
