Ingredients

  1. For kofta gravy paste
  2. 2 cuponion
  3. 15cashew
  4. 2green chilli
  5. 1each laung Elaichi dal chini tejpata
  6. 1 cupwater
  7. 1 cupdahi
  8. For gravy
  9. 1 tbspghee
  10. 2garlic chopped
  11. Salt to taste
  12. 1 tspdhania powder
  13. 1 tspgaram masala
  14. 1 tspkasuri methi
  15. 1 tbspcream
  16. 1 cupmilk
  17. 1 tbspkewra water
  18. For kofta
  19. 1 cupbeetroot raw and grated
  20. 1 cupboiled potato
  21. 2sliced bread fresh bread crumbs
  22. 2 tbspcornstarch
  23. 1 cupgrated paneer
  24. 1/4 cupcashew
  25. Salt to taste
  26. 1 tspred chilli powder
  27. 1 tspgarlic paste
  28. 1 tspchat masala
  29. Oil for frying

Cooking Instructions

    For making kofta gravy paste.

    In a bowl add onion cashew whole spices green chilli water and boil till it is tender.Drain the water and make a smooth paste adding curd in mixer grinder.

    Take pan heat ghee add jeera and garlic and saute for few sec.Add gravy paste and cook add all masala milk cream cook covered for few minutes Add kewra water.

    Kofta making.Heat oil add grated beetroot and cook till it evaporates water add potato mashed and all masala and mix properly.Allow it to cool.

    Once the kofta base is at room temperature, add in cornstarch and breadcrumbs, and mix until well combined. If the kofta dough is too wet, add in cornstarch 1 tsp at a time.

    Now, divide the dough into equal parts and shape them into balls. I Grease your hands with oil and flatten the dough with your hands. Then add your kofta filling into the center. Seal the dough around the filling and and roll them into small round balls with the help of your palms. Then, lightly roll the kofta in all-purpose flour before frying.

    First make only 1 small kofta and fry it in oil to make sure that they are not splitting. If the kofta starts splitting then add 1 tsp cornstarch more in the kofta dough.

    Then make the rest of the kofta balls and fry them in oil on medium heat until they are golden brown and crispy

    When you are ready to serve, cut your koftas in half and warm them for 5 mins
    Then pour hot kofta gravy in your serving bowl. Place kofta pieces in them, and garnish with some chili oil and microgreens. Your Nargisi Kofta In Cashew Kewra Gravy is ready. Enjoy!
