Easy and Quick Buñuelos de Viento

In a saucepan, combine the water, butter, and salt. Heat until the mixture comes to a boil, then add the flour all at once. Stir for a few minutes.

Remove from heat and stir until the dough is smooth and free of lumps. Let it rest for 2 minutes, then add 1 egg and mix well. Continue adding the eggs one at a time, mixing thoroughly after each addition.

When the dough has a custard-like consistency, it is ready.

Heat plenty of oil in a skillet for frying. Using a teaspoon, drop small amounts of the dough into the hot oil. Be careful not to overcrowd the pan, as the dough puffs up quickly. When golden brown, remove to a plate and sprinkle with sugar.

Once all are ready, use a pastry syringe to fill each buñuelo with your chosen filling. Enjoy these delicious buñuelos de viento.
