🥦One-pot Broccoli Pasta 🥦

I was first introduced to this dish while having dinner at a friend’s house. Her mom knew I was vegetarian, so when she asked to to stay for dinner she surprised me with this delicious pasta. I had never had it before, but after the first bite I was immediately pleased with how good it was! . Not only is it simple to make, it taste amazing and it’s a great way to introduce vegetables into your diet. I serve it to my loved ones all the time, and even those who would usually frown at the sight of broccoli, can’t get enough of it !
Notes:
* I measured the spaghetti portion for this recipe by creating a big circle with the tip of my thumb and index finger.
** To prevent the sauce from drying out, I recommend adding up to 1/3 cup of water or pasta water to the pot. I like to add it to the Alfredo sauce jar and shake it before pouring it over the pasta to get every last drop of Alfredo sauce.

Cooking Instructions
- 1
Assemble all ingredients.
- 2
Start by boiling water in a pot over medium heat. As the water is heating, cut broccoli into medium-size florets.
- 3
Once water is boiling, add spaghetti and broccoli and cook uncovered for about 8-9 minutes, or according to package instructions.
- 4
Once the pasta is cooked, drain pasta and broccoli over the sink. Save about 1/3 cup of the pasta water.
- 5
Carefully, remove broccoli florets and place them back on the cutting board to roughly chop them.
- 6
Over medium-low heat, add 1 cup of Alfredo sauce and let it simmer for 20-30 seconds before adding the pasta and the chopped broccoli. If you desire a smoother sauce, add up to 1/3 cup of pasta water**
- 7
Optionally, add 1 tsp of red pepper flakes for a subtle kick. Mix well
- 8
Serve warm ! Yum 😋

Pasta with Broccoli Cream Sauce Pasta with Broccoli Cream Sauce
I was trying to make pasta with broccoli, but I was too slow and everything fell apart. So, I made a variation using cream sauce, and it was so delicious that now it's one of our family's favorite.Sprinkle parmesan cheese before serving if desired.Change milk and butter to fresh cream for a richer flavor. It goes well with coarsely ground black pepper. One-Pot Healthy Creamy Spinach Asparagus Pasta One-Pot Healthy Creamy Spinach Asparagus Pasta
As I was searching the web for pasta recipes, I realized most of them called for cream cheese, an entire cup of fattening cream, and a lot of cheese. So I asked myself, how do I come up with a recipe that tastes creamy and flavorful and rich but doesn't have a ton of saturated fat? The answer? Cornstarch. That's right. I know it sounds weird but it works. It thickens the sauce just like how cheese would without the added unhealthy saturated fats that clog up your arteries. I substituted traditional cream with 1% milk and organic chicken stock, which not only gives it great chicken flavor but reduces the amount of fat called in more traditional recipes. So give it a go and tell me what you think! Fluffycakehamster -
