🥦One-pot Broccoli Pasta 🥦

I was first introduced to this dish while having dinner at a friend’s house. Her mom knew I was vegetarian, so when she asked to to stay for dinner she surprised me with this delicious pasta. I had never had it before, but after the first bite I was immediately pleased with how good it was! . Not only is it simple to make, it taste amazing and it’s a great way to introduce vegetables into your diet. I serve it to my loved ones all the time, and even those who would usually frown at the sight of broccoli, can’t get enough of it !

Notes:
* I measured the spaghetti portion for this recipe by creating a big circle with the tip of my thumb and index finger.
** To prevent the sauce from drying out, I recommend adding up to 1/3 cup of water or pasta water to the pot. I like to add it to the Alfredo sauce jar and shake it before pouring it over the pasta to get every last drop of Alfredo sauce.

Ingredients

  1. 1 cupbroccoli florets
  2. 1 cupAlfredo sauce
  3. 2-3servings spaghetti*
  4. 1/4 tspblack pepper
  5. 1/3 cupwater or pasta water
  6. 1 tspred pepper flakes (optional)

Cooking Instructions

    Assemble all ingredients.

    Start by boiling water in a pot over medium heat. As the water is heating, cut broccoli into medium-size florets.

    Once water is boiling, add spaghetti and broccoli and cook uncovered for about 8-9 minutes, or according to package instructions.

    Once the pasta is cooked, drain pasta and broccoli over the sink. Save about 1/3 cup of the pasta water.

    Carefully, remove broccoli florets and place them back on the cutting board to roughly chop them.

    Over medium-low heat, add 1 cup of Alfredo sauce and let it simmer for 20-30 seconds before adding the pasta and the chopped broccoli. If you desire a smoother sauce, add up to 1/3 cup of pasta water**

    Optionally, add 1 tsp of red pepper flakes for a subtle kick. Mix well

    Serve warm ! Yum 😋
