A quick recipe because my daughter is coming over and I didn't have a stuffed zucchini recipe I liked.

Chop the onion and garlic, then sauté them in olive oil.

Peel and dice the carrots into small cubes, add them to the onion, cover, and cook over medium heat for 10 minutes.

Wash the zucchini, cut them in half lengthwise, and scoop out the flesh with a spoon. Set the flesh aside. Season the zucchini halves with olive oil, salt, pepper, oregano, or herbs of your choice. Place them in the air fryer basket and cook at 320°F (160°C) for 15 minutes on Air Fryer mode.

Add the reserved zucchini flesh and diced tomatoes to the carrots. Brown the ground meat separately, then add it to the mixture. Season to taste. Taste and adjust seasoning as needed.

Fill the zucchini halves with the mixture. Top with shredded cheese (here, shredded goat cheese).

Cook for 15 minutes at 400°F (200°C) in the air fryer. Adjust the temperature as needed for your air fryer model (for example, with the Cosori TwinFry, 356°F/180°C may be better).

Serve with rice, quinoa, or any other grain of your choice.
