Heat olive oil in a kadai.

Once hot add the chopped garlic.

Once it turns light brown add the sliced onions, red and yellow bell peppers and stir for 2 minutes.

Now add salt and Kashmiri red chilli powder and mix well.

Now add the boiled rice and mix everything well.

Now add the chopped tomatoes and sliced cherry tomatoes and mix well.

Now add the chopped spring onions and mix well.

Garnish with chopped coriander leaves and set aside.

Mexican fried rice is ready to be served.
