Ingredients

  1. Ingredients for Rajma
  2. 1 bowlboiled rajma
  3. 1 podgarlic
  4. 1 inchginger
  5. 2onions
  6. 2tomatoes 🍅
  7. 1 tbspcurd
  8. 1 inchcinnamon stick
  9. 1 tspcumin seeds
  10. 4cloves
  11. 1 tspgaram masala powder
  12. 2 tspRed chilli powder & 1 tsp chilli flakes
  13. 1/2 tspturmeric powder
  14. 2 tspsalt or as per taste
  15. 2 tbspmustard oil
  16. Ingredients for Ambal
  17. 1/2 kgpumpkin cut into pieces
  18. 4green chillies
  19. 50 gmtamarind soaked in water
  20. 1 tspmustard seeds
  21. 50 gmjaggery
  22. 1.5 tbspmustard oil
  23. 1.5 tspsalt
  24. Meethe chol or meethe rice
  25. 1 cupbasmati rice
  26. 5-6almonds
  27. 5-6cashews
  28. 5-6raisins
  29. 1 tbspcoconut into pieces
  30. 1 tspblack pepper
  31. 2 tspfennel seeds
  32. 1/2 tspturmeric powder
  33. 2-4cloves
  34. 1/2 inchcinnamon
  35. 2 tbspdesi ghee
  36. 1 cupsugar or as per taste

Cooking Instructions

    Prepare masala for rajma.Add onion garlic ginger,cumin seeds,cloves& cinnamon in the mixi jar,prepare paste also add little water while preparing paste

    Heat oil in the wok and add masala paste also add little water in the mixi jar & pour in the wok and cook on low heat

    When it changes colour add salt and cook for 1-2 min.

    Till masala releases oil and the raw smell of garlic goes out then add tomato paste

    Mix well & add red chilli, turmeric & chilli flakes also add little water to cook on low heat

    When it cooks properly add curd while stirring continuously cook for 2-3 min.then add boiled rajma

    With water mix well then cook it in a low flame till consistency becomes better

    Or transfer in the pressure cooker for 2-4 whistles or keep it in the wok & cook for 10 min.on low flame

    For Ambal heat oil in the wok add mustard seeds when splitter add green chillies with pieces of pumpkin

    Also add red chilli, turmeric,salt mix well and cook on low flame while covering with a lid.

    After 2-3 min. Open the lid stirring well then add tamarind water after straining the seeds

    Also add jaggery cut into pieces

    Now cover and cook again on a low flame for 2-4 min.then off the flame

    Colour also changes.its very yummy 😋

    Now meethe chol or sweet rice Heat ghee add dry fruits cut into slices, fennel seeds,black pepper,cloves & cinnamon

    Roast for a few seconds then add turmeric powder saute well then add rice cook for a 1-2 min.on a low flame

    While stirring continuously then add water & sugar mix and pressure cooker till 1 - 2 whistle then off the flame.

    Prepare thali while adding all prepared recipes & serve with rice,roti,salad,padad,desi ghee, chutney & enjoy dogri Thali 😋🙏
