Ingredients

2 servings
  1. 2 links(sliced) Garlic chicken sausage
  2. 1 bag (340 g)Trader Joe’s cauliflower gnocchi
  3. 1/2(sliced) Yellow squash
  4. 1/2(sliced) Zucchini
  5. 1 cupBroccoli florets
  6. 2 tbspOlive oil
  7. 1/2 tspSalt
  8. 1/4 tspBlack pepper
  9. 1/2 tspGarlic powder
  10. 1/2 tspOnion powder

Steps

  1. 1

    Preheat oven to 425°F.

  2. 2

    Toss squash, zucchini, broccoli, and sausage with 1 tbsp olive oil, salt, pepper, garlic powder, and onion powder.

    Spread veggies and sausage on a baking sheet. Roast for 25 minutes.

  4. 4

    Heat 1 tbsp olive oil in a pan. Add cauliflower gnocchi and cook until golden and crispy.

  5. 5

    Serve roasted veggies and sausage with pan-seared gnocchi.

Tips

For extra crispy gnocchi, ensure the pan is hot before adding them and avoid overcrowding.
