Credit to my husband for creating this filling salad on a whim—crisp cucumbers, protein-packed chickpeas, bold spices, and a bright lemony dressing. Unlike other salads, this one truly satisfies!

Dice the cucumbers and bell pepper. Finely chop the red onion and cilantro (if using).

In a large mixing bowl, combine the chickpeas, cucumbers, bell pepper, red onion, and cilantro.

Add the cumin, onion powder, garlic powder, paprika, salt, and pepper to the bowl.

In a separate small bowl, whisk together the lemon juice, olive oil, and balsamic vinegar. Pour the dressing over the salad and toss gently to combine.
