Heat a pan with oil and sizzle the mustard and fenugreek seeds.

Add garlic and green chillies and sauté 1 minute.

Add the potatoes and egg plants and mix well.

Add salt and mix; cover and cook for 8 minutes.

Add the powdered spices and mix well, cooking for another 3-4 minutes.

Add the tomato paste and water. Mix and cover and simmer till potatoes are tender and the curry is dry.

Add cilantro and serve.
