Ingredients

  • 3 tbsp.oil
  • 1 tsp.mustard seeds
  • 1/2 tsp.fenugreek seeds
  • 1 tbsp.garlic, minced
  • 4green chillies, slit
  • 3potatoes, cubed, soaked
  • 8baby egg plants (baigan), cubed, soaked
  • To taste, salt
  • 1/2 tsp.turmeric
  • 1 tbsp.coriander powder
  • 1 tbsp.chilli powder
  • 1 tsp.garam masala
  • 1 cubetomato paste
  • 1/4 cupwater

Steps

  1. 1

    Heat a pan with oil and sizzle the mustard and fenugreek seeds.

  2. 2

    Add garlic and green chillies and sauté 1 minute.

  3. 3

    Add the potatoes and egg plants and mix well.

  4. 4

    Add salt and mix; cover and cook for 8 minutes.

  5. 5

    Add the powdered spices and mix well, cooking for another 3-4 minutes.

  6. 6

    Add the tomato paste and water. Mix and cover and simmer till potatoes are tender and the curry is dry.

  7. 7

    Add cilantro and serve.
