In a tall, narrow jar that holds at least 1 1/2 cups, add the whole egg, mustard, salt, and 1 tablespoon of oil. Blend well with an immersion blender or hand mixer for 1 minute.

Gradually add the remaining oil while blending. The mayonnaise will start to thicken.

Finally, add the lemon juice to taste. Refrigerate the mayonnaise immediately until ready to use.
