Stroganoff is a classic Russian dish. It is made with Beef, Mushrooms and Onions in a creamy savoury sauce usually served over Egg Noodles, Mashed Potatoes or Rice.
This is a simple Vegetarian version that iam sharing here today with Mushrooms, Onions, homemade dried Herbs, Seasoning cubes for the stock and finally a lot of Sour Cream, fresh Cream and White sauce. A comforting meal that's a must have one on any given day.
It's a quick meal that can be whipped up in no time. The best part is that it is a one pot meal. Although Beef Stroganoff is the most sought after dish, this Mushroom Stroganoff is no less either in terms of both taste and flavour. Chicken is also used as a variation by many. Whatever be the main ingredient either Veg or Non-Veg, the taste, texture and the overall flavour doesn't change at all. Worcestershire sauce, Dijon Mustard and Garlic all add depth and tang. It's absolutely delightful and desirable. It's luscious, creamy and above all a bit tangy with a soft melt in mouth texture. I have used this Mushroom Stroganoff over Egg Noodles this time. However it tastes equally delicious with Rice.

Slice mushrooms thinly. Set aside. Also boil noodles as per the package instructions.

Heat butter and oil in a pan or a kadai. Add finely chopped garlic first. Fry for a minute and then add the thinly sliced mushrooms. Saute them until aromatic.

Also add black pepper, salt and paprika to it. Give it a mix. Also add a tablespoon of mustard sauce. Here i have added kasundi (Bengali Mustard sauce). Throw in a seasoning cube as well. Also add a cup of water.

Meanwhile heat butter and the plain flour. Keep stirring until it's done and aromatic. Now add milk to it and cook until it reaches a desired consistency of thickness. Adjust salt and pepper. Take it off the heat.

Add sour cream to the kadai. And finally add the white sauce too followed by a generous dollop of fresh cream. Also top with mixed herbs too.

Serve it piping hot over Spaghetti or Egg Noodles. Enjoy!
Tips
Using fresh chicken breasts enhances the flavor, and the dried Kachri adds a unique twist to the traditional recipe.
