First, keep all the ingredients ready. Cut the brinjals into long pieces. In a medium-sized bowl, add red chilli powder, salt, and turmeric powder, and mix well.

Add the cut brinjals to this mixture and mix until they are evenly coated with the spices. Heat oil in a kadhai, fry the coated brinjals, and then remove them onto a plate.

In a mixer jar, add poppy seeds, green chilies, and water, and blend into a fine paste. In the same kadhai, heat oil. Once hot, add crushed garlic and sauté for 30 seconds. Then add the blended paste and sauté for another 30 seconds.

Add ½ cup of warm water and salt, then boil for 1 minute. Add the fried brinjals, mix well, and cook briefly. Serve hot with fried green chilies, along with roti or chapati.
