Steps

Soak amaranth seeds in water overnight.

Drain and pressure cook soaked seeds with fresh water for 2-3 whistles.

Drain excess water from cooked seeds and keep aside.

Heat oil, add mustard seeds, curry leaves to splutter.

Add chopped onion and green chili, sauté until soft.

Add mixed vegetables and turmeric, cook until vegetables are tender.

Add cooked amaranth seeds and salt and cashew nuts mix well and cook for 4 to 5 minutes. Lastly, add lemon juice. Give it a good mix and it is done.

Serve warm.
Tips
For added flavor, you can roast the cashews separately before adding them to the upma.
