The last time I ate this is back when I was still at UK, so I wanted to make this cake as my weekly cake challenge.
The actual cooking time is just 20m, then chill for few hours.

The last time I ate this is back when I was still at UK, so I wanted to make this cake as my weekly cake challenge.
The actual cooking time is just 20m, then chill for few hours.
Steps

Preheat oven to 190°C (fan).

Mix all cake ingredients in a bowl until smooth.

Divide batter evenly into two cake tins.

Bake for 20 minutes until golden and springy.

Cool cakes completely on a rack.

Trim the top of each cake so you get a flat surface on both cake.

Top with strawberry jam.

Spread Swiss meringue buttercream on one cake layer.

Place the second cake on top to sandwich.

Dust with powdered sugar and serve.
Tips
For best results, ensure the cakes are completely cool before assembling to prevent the buttercream from melting.
