Mix besan, salt, garam masala, and ajwain in a bowl. Add water gradually to make a thick batter.

Heat a dosa pan on medium heat. Pour a ladle of batter and spread gently.

Cook on low flame until the bottom is set.

Spread 1 tbsp green chutney over the chilla.

Sprinkle grated paneer and cheese evenly on top.

Add chaat masala, chopped onion, tomato, and coriander leaves.

Cover and cook until cheese melts and chilla is golden.

Transfer to a serving plate and enjoy hot.
Tips
For a crispier chilla, ensure the pan is well-heated before pouring the batter and cook on low flame.
