When you need to clear out the fridge before leaving for vacation, you have to use only what you have on hand—and sometimes you end up with some pretty tasty dishes!

Lightly grease a baking dish with extra virgin olive oil, then arrange a layer of grilled eggplant slices on the bottom.

Place a piece of cooked ham and a piece of provolone on each eggplant slice, then cover with another slice of eggplant.

Spoon tomato sauce over each stack, then top with a basil leaf and a small piece of provolone.

Bake at 340°F (170°C) for 15–20 minutes.
