Sponge Gourd Bharwa Sabzi

Start by washing, peeling, and chopping the sponge gourd into big pieces.

Mix besan, turmeric, red chilli, jeera-coriander powder, garam masala, hing, salt, lemon juice, and sugar to make the bharwa masala.

Fill the chopped gourd pieces with the masala.

Heat oil in a pan, add mustard seeds, jeera, hing, and curry leaves. Now add the tomato pieces.

Add stuffed gourd pieces, cover, and cook on low heat until soft.

Sprinkle some bharwa masala and garnish with some chopped coriander leaves. Serve and enjoy ✨
Tips
Adjust the spices according to your taste preference. You can also add more vegetables or serve with roti or rice.
