Mix the sourdough starter with the water and let it sit. Add the flour and salt, mixing until combined. Let rest for 30 minutes. Add the honey, jalapenos, and cheddar cheese. Fold the dough 12 times to incorporate, then let rest for 30 minutes. Repeat this folding and resting process two more times (for a total of three times).

Shape the dough and place it in a proofing basket. Let it rise for 1 hour, then refrigerate for 8 hours.

Preheat the oven to 450°F (230°C). Bake for 40-45 minutes. Let the bread cool completely before slicing. (Note: The dough was rested a bit less than usual in this recipe.)
