For the topping: Blend soaked cashews, water, maple syrup (or honey), lemon juice, vanilla, cinnamon, and salt until smooth and creamy. Serve pancakes warm, topped with tangy cinnamon cashew cream. Enjoy the delicious pancake with cashew cream topping and a few diced mangoes

For extra flavor, consider adding a pinch of salt to the pancake batter and adjusting the sweetness of the cashew cream to your liking. you may even add chia seeds to the batter
