  3. 2Banana (ripe, mashed)
  4. 1/2 cupRipe mango (diced)
  5. 1 tbspFlax meal
  6. 1/2 cupAlmond milk
  7. 2 tbspPowdered jaggery
  8. 1/2 tspCinnamon
  9. 1 tspBaking powder
  10. 1/2 cupRaw cashews (soaked)
  11. 1/4 cupWater
  12. 1 tbspMaple syrup or honey (optional)
  13. 1 tspLemon juice
  14. 1/2 tspVanilla extract (optional)
  15. 1/4 tspCinnamon (for topping)
  16. 1 pinchSalt

    Make a checklist. keep all ingredients within reachBlend rolled oats into a fine powder.

    In a bowl, mash the banana and mix with almond milk. Add powdered oats, powdered walnuts, flax meal, powdered jaggery, cinnamon, and baking powder. Mix well. Add powdered oats, powdered walnuts, flax meal, powdered jaggery, cinnamon, and baking powder. Mix well. Gently fold in diced mango.

    Heat a non-stick pan over medium heat. Pour batter to form pancakes. Cook until bubbles appear, then flip and cook until golden brown.

    TANSFER to a serving plate. top with mangoes or sprinkle chopped nuts of your choice

    For the topping: Blend soaked cashews, water, maple syrup (or honey), lemon juice, vanilla, cinnamon, and salt until smooth and creamy. Serve pancakes warm, topped with tangy cinnamon cashew cream. Enjoy the delicious pancake with cashew cream topping and a few diced mangoes

    Tips
    For extra flavor, consider adding a pinch of salt to the pancake batter and adjusting the sweetness of the cashew cream to your liking. you may even add chia seeds to the batter
