Ingredients

30 minutes
4 servings
  • 2 cupsBasmati Rice
  • 4 tbspghee
  • 3Onions sliced
  • 12Cashewnuts
  • 10-12kishmish
  • 4 cupswater
  • 1 tbspsalt
  • 1lemon
  • For Aromatic Tempering:
  • 1cinnamon
  • 1star anise
  • 1mace flower(javantri)
  • 2black elaicho
  • 4green cardomom
  • 4cloves
  • 3bay leaves
  • 1 tspfennel seeds
  • 1" piece ginger
  • 1green chilli
  • 2red chillies

Steps

30 minutes
  1. 1

    First, wash and soak Basmati rice for 20 minutes. Ready all khada masalas. Slice the onions evenly and keep everything ready.

    In 4tbsp ghee, fry the sliced onions. Keep stirring to avoid burning of onions. When nice and golden brown, take the onions out onto a plate.

    In same ghee fry cashews and kishmish. Keep them in the plate.

    Now the Nei Choru can be prepared in a jiffy. In same ghee, add 1tbsp ghee again and the aromatic whole spices, ginger and chilli. Saute for 1 minute and add in 4 cups of water.

    Add salt. Bring to a rolling boil. Drain the soaked Basmati rice and add into the boiling water. Cook in open pan for 3-4 minutes. Stir in between to cook the rice evenly.

    Now add in fried onions, cashews and kishmish (reserve some for garnish). Mix gently.

    Squeeze lemon juice for keeping the rice non sticky. Cover lid and cook the rice until done. Now keeping gas slow cook the rice until done. Adjust for salt if needed. Stir in between gently.

    When the rice is cooked,give final stir. Switch off gas. Cover lid and rest the rice for 10 minutes. Super AROMATIC NEI CHORU
