First, prepare the soya chunks by boiling for 10 minutes, squeezing the water and then washing again in cold water. Squeeze again and keep covered.

Heat 1 tablespoon oil or ghee in a kadhai. Add cumin seeds, chopped green chillies, ginger and garlic paste and saute for 2 minutes. Add the chopped onion, tomato and saute for 5 minutes till tomatoes turn soft.

Add the blanched and cold spinach and saute for 2 minutes. Then transfer to another bowl and cool the mixture.

Puree it to smooth paste. Then heat the kadhai and add 1 teaspoonful of ghee or oil. Add 1/2 teaspoon cumin seeds, the prepared paste and saute for 5 minutes till aromatic. Then add in the soya chunks,chopped boiled and skinned potatoes, all spices, seasonings and let it cook for 5 minutes.

Switch off the heat,mix in lemon juice and transfer the serving bowl.

Garnish with chopped coriander leaves and serve hot with roti, rice or paratha. Enjoy healthy, protein rich Soya Palak Potato curry.
