Ingredients

1 cake
  1. 1 cupAll-purpose flour
  2. 1/2 cup(up to 3/4 cup for more sweetness) Sugar
  3. 1/4 cupUnsweetened cocoa powder
  4. 1.5 tspBaking powder
  5. 2Eggs
  6. 1/2 cupMilk
  7. 1/4 cupOil
  8. 1 tspVanilla extract (optional)
  9. 1 pinchSalt
  10. 2–3 tbsp Hot water or coffee (optional)
  11. 1 tspLemon zest (finely grated)

Steps

  1. 1

    Preheat oven to 175°C (350°F). Grease and flour your cake tin.

  2. 2

    Whisk eggs and sugar until light and foamy.

  3. 3

    Add milk, oil, vanilla, and lemon zest. Mix well.

  4. 4

    Sift flour, cocoa powder, baking powder, and salt in another bowl.

  5. 5

    Add dry ingredients to wet. Mix until just combined.

  6. 6

    Stir in hot water or coffee for a smoother batter.

  7. 7

    Pour into pan, tap to release air bubbles.

  8. 8

    Bake 30–35 min, until a toothpick comes out clean.

  9. 9

    Cool before removing from pan.

Tips

Adding lemon zest gives a light citrus aroma that pairs beautifully with the cocoa.
