Chicken Salad with Vegetables

The classic chicken salad, perfect for a hot day or when you're in a hurry and want to make something quick. You can also add diced cooked potatoes, but I leave them out for dietary reasons. Feel free to use more or less mayonnaise and sour cream, depending on your taste.

Prepare the ingredients. Cook the vegetables—I use the microwave, since each one takes about 2 to 3 minutes. Start with 1 1/2 minutes, then add 30 seconds at a time until they reach your desired doneness. Check often to avoid overcooking and making them mushy. Mix the mayonnaise and sour cream with salt and pepper to taste.

Combine the chicken with the mayonnaise and sour cream mixture. Add the cooled vegetables.

Gently mix so the vegetables don't get mushy. Serve on tostadas or with crackers, along with a green salad.
