Prepare the Ingredients:
De-seed the dates (if not already done) and chop them into small pieces. Finely chop the ginger, garlic, and green chilies. Crush or grate the jaggery cubes. Prepare the tamarind puree and keep all the spices ready for quick cooking. - 2
Heat oil in a pan and add mustard seeds. Let them splutter.

Sauté the chopped garlic first until lightly fragrant. Then add the ginger and sauté well. Finally, add the green chilies and sauté everything together until aromatic.

Add turmeric and red chili powder. Mix quickly.

Add crushed jaggery and let it begin to melt slightly.

Add tamarind puree and mix well until combined.

Add chopped dates and salt. Mix everything well.

Cook for 2–3 minutes until glossy and slightly sticky. Switch off the flame and allow it to cool completely before storing.

Serving Idea:
Enjoy it with rotis…
Or make a Sweet & Spicy Dates Toastie 🥪🔥Butter one side of two bread slices and toast lightly.
Spread the Dates Pickle generously on the toasted side.
Apply butter on the outer (untoasted) sides, close the sandwich, and toast again until golden and crisp.
Slice into triangles and enjoy warm — sweet, spicy, buttery crunch in every bite! 😍 - 13

Tips
• Adjust jaggery and tamarind as per your sweet-tangy preference.
• If dates are slightly firm, add 1–2 tbsp warm water while cooking.
• It thickens further on cooling.
• Store in a clean, dry glass jar in the refrigerator.
• Always use a dry spoon.
