Ingredients

2 servings
  1. 200gm arbi (taro root)
  2. 2 tbspMustard oil
  3. 1pinch Asafoetida
  4. 1/2tsp Cumin seeds
  5. 1/2tsp Celery seeds (ajwain)
  6. 2sliced Green chillies
  7. 1/2tsp Turmeric powder
  8. 1/2tsp Dry coriander powder
  9. 1/2tsp Red chilli powder
  10. 1/2tsp Vegetable masala or cumin powder
  11. 1tsp (adjust to taste) Salt
  12. 1-2 tbspchopped Fresh coriander or mint leaves

Steps

  1. 1

    Wash arbi 2-3 times. Pressure cook with water for 1 whistle. Let pressure release naturally.

    Peel arbi and cut into round slices.

    Heat mustard oil in a pan. Add asafoetida, cumin seeds, celery seeds, and green chillies.

    Add turmeric, coriander, red chilli, and vegetable masala/cumin powder. Fry on low flame.

    Add arbi slices and salt. Fry on medium-high heat until crispy and well coated, about 4-5 min.

    Garnish with fresh coriander or mint leaves. Serve hot.

Tips

For extra crispiness, fry the arbi slices a little longer and ensure they are well coated with the spices.
