Steps

Wash arbi 2-3 times. Pressure cook with water for 1 whistle. Let pressure release naturally.

Peel arbi and cut into round slices.

Heat mustard oil in a pan. Add asafoetida, cumin seeds, celery seeds, and green chillies.

Add turmeric, coriander, red chilli, and vegetable masala/cumin powder. Fry on low flame.

Add arbi slices and salt. Fry on medium-high heat until crispy and well coated, about 4-5 min.

Garnish with fresh coriander or mint leaves. Serve hot.

Tips
For extra crispiness, fry the arbi slices a little longer and ensure they are well coated with the spices.
