I was kinda leery about making this tonight but it was a hit!!! If you dont like jiffy cornbread mix because it is a little sweet i was very surprised that you didnt really taste that sweetness.Give it a try!!!!!

Ingredients

15-20 minutes

  1. 1 boxJIFFY corn muffin mix
  2. 1/2 cupsour cream. (DONT FORGET TO PUT 1 EGG IN)
  3. 1/2 cupcorn kernels (canned,fresh, or frozen
  4. 2 tbsp.melted butter
  5. Cooking spray, for skillet
  6. 1tbsp.extra-virgin olive oil
  7. 1large onion,chopped
  8. 2 clovesgarlic, minced
  9. 1 tbsp.Taco Seasoning
  10. 2cup.Shredded chicken
  11. 3/4cup. enchilada sauce,divided
  12. 1cup.shredded Cheddar cheese
  13. 1cup.shredded Monterey Jack
  14. Chopped fresh cilantro, for garnish

Cooking Instructions

15-20 minutes

    Preheat oven to 400°.Prepare cornbread base: In a medium bowl, combine corn muffin mix, sour cream, egg,corn,and melted butter. Whisk until evenly combined. Spray a large oven-safe skillet with cooking spray. Pour into a large cast iron skillet and bake until golden, 15 minutes. Let cool slightly.

    Meanwhile, in a large skillet over medium heat, heat oil.Add onions and cook until tender, 5 minutes, then add garlic and cook 1 minute more.Add taco seasoning and season with salt.Add chicken and 1/2 cup enchilada sauce and stir until combined.

    Poke holes all over cornbread with the bottom of a wooden spoon. Pour remaining 1/4 cup enchilada sauce over poke holes and top with chicken mixture.

    Top with cheese and Monterey jack and bake 20 minutes more.

    Garnish with cilantro and serve

I really like the idea of a little bit of sweetness from the Jiffy. This looks super tasty!
