Veg Caldin from the State of Goa is a mildly spiced, creamy and a flavourful dish made with Vegetables and Coconut Milk. With roots in Portuguese cuisine, this Curry is comforting and traditionally made with Prawns and Fish. But the Vegetarian version is also a popular staple.
The name 'Caldin' or 'Caldinho' in Portuguese means little soup or broth which reflects it's light and balanced flavour compared to other Goan Curries. It is not fiery like other dishes. The main creamy and a luscious texture of this dish is due to the use of freshly extracted Coconut Milk. It has Sugar and Tamarind paste also that gives it a unique sourness. The Yellow colour comes from Turmeric and the other spices used in which Red Chilli is used in minimal quantity. Green Chillies are used instead for the little spicy touch. That's it.
A super tempting and irresistible easy Curry that can be made with a horde of favourite Vegetables for meals. I had used Zucchini just for a change. Mushy and soft Vegetables are not used in this Curry but if desired can add according to one's own choice. There's no harm in it. And take care not to cook it for a long time. Let's begin with the recipe straight away.

Steps

Heat coconut oil in a pan. Add curry leaves, green chillies and chopped onions. Saute until translucent and then add tomatoes. Saute until tomatoes are soft and done.

Add all the vegetables now. Stir well.

Add turmeric, red chili, coriander, and cumin powders. Mix to coat the veggies.

Pour in thin coconut milk and salt. Simmer until vegetables are tender. Halfway through also add the tamarind paste and sugar. Mix well.

Once the veggies are done, add thick coconut milk or cream. I have used the coconut cream. Gently heat without boiling, then remove from heat. Garnish with chopped coriander leaves.

Serve hot with rice or bread. It's absolutely refreshing and flavourful. Enjoy!
Tips
For added flavour, you can adjust the spice level by adding more Green Chillies or Red Chilli powder according to your taste.
