Sri Lankan Lamb rolls - Fried amazing and WOW :P

Ok This my first time cooking Sri Lankan food and I also have never been so no idea if taste is authenic but WOW are these good - packed with flavour and contains protein and carbs and alot of herbs so I served with a spicy timbal and a 3 tomato salad - WOW :P enjoy :P

Steps

Peel potatos and boil until breaking around 12-14 mins. Drain and leave to cool.

Heat 2 Tbsp of oil and Fry the lamb for 8-10 mins until starts to brown. Add the onions, Mint and Chilli and cook for a further 5-6 mins until onions soften. Drain any liquid and allow to cool.

Use a banana Leaf (or baking Parcment) use a heaped Tbsp spoon on mixture and spread out evenly about 8cm x 10cm. Put 2 Tsp of Mince in the middle. Then Roll into a fat Cigar Shape. Place on a tray and repeat with all mixture then put in fridge to chill for at least 45 mins.

Carefull Unwrap, Dust with Flour then egg then breadcrums. Set on the side for 5 mins.Whlle you heat the oil to 180C.

Cook in 3 batches until golden brown and crisp. Then put to drain on Kitchen paper. Serve Hot or cold with your favour Dips / Salad - anything really - ENJOY :P
