Ingredients

3 servings
  • 1large cup basmati rice
  • 1onion
  • 1bell pepper
  • 1/2 cupgreen peas
  • 3 table spoonbutter
  • 1tomato
  • 1/2carrot
  • 1 teaspoonginger-garlic paste
  • 1bay leaf
  • 2cardamoms
  • 2cloves
  • 1 teaspooncumin seeds Mace
  • 6-7black peppercorns
  • 1cinnamon stick
  • 1.5 teaspoonspav bhaji masala
  • 1 teaspoonKashmiri red chili peppers
  • 1 teaspoonred chili sauce/Schezwan sauce
  • 2green chilies
  • leavesGreen coriander
  • 1/2 teaspoonkasuri methi
  • Lemon juice to taste
  • 3-4 tablespoonsbutter
  • Salt to taste

Steps

  1. 1

    1) First, clean and wash the basmati rice, then soak it in water for 20 minutes.When the rice has puffed up a bit, add a little salt and water and cook it until it's 80% cooked. This will keep the rice fluffy and fluffy.

    2) On the other hand, cut the vegetables for the Mumbai-style tawa pulao into desired shapes as shown in the picture. Remove the whole spices as well.

    3 ) This pulao is made on a griddle. So, put 3 tablespoons of butter on the griddle, then add all the whole spices and fry for 30 seconds. Add the ginger-garlic paste and fry for 1 minute. Then add the chopped onions and cook until they turn slightly red.

    4 ) Now put carrots, peas, tomatoes on the pan and cook for 2 minutes.Then add capsicum and cook it also for about 2 minutes.

    5 ) When the tomatoes become soft and the vegetables are cooked, add pav bhaji masala and Kashmiri red chilli powder, a little salt and cook.

    6 ) Now add red chilli sauce as per your choice and cook for half a minute. If red chilli sauce is not available, then add Schezwan sauce.

    7 ) Now put the rice on the pan as shown in the picture. Mix it well with the spices and vegetables.Add crushed kasuri methi. Cover the Mumbai style tawa pulao and cook it on low flame for 2-3 minutes.This will cook the rice well in the steam and keep it fluffy. Now add lemon juice and finely chopped coriander leaves, stir and then turn off the gas.

    8 ) Garnish the Mumbai-style tawa pulao with onion rings and mint leaves.TheMumbai-style tawa pulao is ready; serve hot.
