Mix paneer, potatoes, carrots, coriander, ginger garlic paste, spices, lemon juice, and salt in a bowl.

Shape the stuffing into small lemon-sized balls.

Knead puri dough using wheat flour, semolina, salt, oil, and water.

Divide dough into small balls and roll each into a small disc.

Place stuffing ball in the center of each disc, fold edges over, and press gently.

Heat oil in a nonstick pan over medium flame.

Shallow fry kachoris until golden brown on both sides.

Arrange kachoris on a tray and brush with hot ghee for a glossy finish.

PANEER ALOo KACHORI. is ready for serve. Serve with mint Chutney and Tomato sauce. This is my favourite a very Tangy, delicious party dish.
Tips
Ensure the oil is hot enough before frying to achieve a crispy texture.
