Kofta nihari

When it comes to Pakistani cuisine, few dishes evoke the same sense of warmth, history, and indulgence as Nihari. And for those who appreciate a truly rich and flavourful experience, Kofta Nihari stands as a testament to the art of slow cooking and the perfect marriage of textures.
This dish isn't just food; it's a story told through spices, a comfort for the soul, and a celebration of a culinary heritage.
Traditionally, Nihari is a slow-cooked beef or lamb stew, celebrated for its fall-off-the-bone tenderness and gravy that's thick, spicy, and deeply aromatic. The secret lies in the long hours of simmering, which allows the bone marrow to melt into the broth, creating an unparalleled richness and gelatinous texture.
Enter the Kofta: A Perfect Partnership. While classic Nihari is a masterpiece on its own, the addition of kofta (spiced meatballs) elevates the dish to a new level.
Kofta Nihari takes the beloved gravy and combines it with tender, flavourful meatballs, creating a delightful contrast in textures.
The softness of the gravy is beautifully complemented by the slightly firmer, yet equally melt-in-your-mouth, koftas.
The koftas are gently added to the simmering Nihari gravy, where they absorb all the complex flavours of the stew.
Kofta Nihari is more than just a main course; it's a complete dining experience.
