Ingredients

  • 1/2 lbAcini de pepe pasta
  • 1 canPineapple chunks (canned, regular size)
  • 1 canMandarin oranges (canned, medium size)
  • 3/4 cupSugar
  • 2 tablespoonsFlour
  • 2Beaten eggs
  • dashSalt
  • as neededWhipped cream

Steps

  1. 1

    Cook pasta, drain very well, and set aside.

  2. 2

    In a saucepan, combine sugar, flour, eggs, salt, and reserved fruit juice.

  3. 3

    Cook over low-medium heat, stirring, until thickened and just boiling.

  4. 4

    Pour custard over drained pasta, mix, and chill overnight.

  5. 5

    Before serving, add pineapple and whipped cream, then gently fold in mandarin oranges.

Tips

For a lighter texture, fold in the whipped cream just before serving.
