Assemble all ingredients. Press tofu in a tofu presser or under a heavy object for 10 minutes to extract moisture.

After tofu is pressed, cut into 1-1.5 inch pieces. In a bowl, add tofu, 1/2 tbsp of corn starch, 1tsp of paprika, 1tsps of Italian seasoning, 1/4 tsp of salt, 1/4 black pepper, 1/4 tsp of asafetida. Mix until tofu is evenly coated.

In a non-stick sauce pan or cast iron, add 2 tbsp of extra virgin olive oil. Add tofu and cook for 5-7 minutes, turning pieces often until they are golden brown.

In the meantime, assemble marinade by melting 2 tbsp of butter and adding 1 tbsp of Dijon mustard, 1/2 tbsp of honey and a pinch of salt and pepper. Mix well

Once tofu is golden brown, transfer to a bowl and coat it with the marinade. Set aside.

To make the avocado spread, smash 1/2 Hass avocado with a fork, add 1/2 tsp of extra virgin olive oil, pinch of salt and pepper and 1 tsp of lemon juice. Mix well

You are ready to assemble wrap: on a single or double tortilla add avocado spread, then carrots, tomatoes, cilantro, tofu and top with spinach. Fold tortilla sides inwards and then roll while tucking the ingredients in to form a wrap.
