Steps

Heat oil in a pot, add whole spices and saute until fragrant.

Add onions, cook until golden brown.

Stir in ginger-garlic paste, cook for 1 minute.

Add mutton, brown on all sides.
- 5
Mix in all ground spices and salt, cook for 2 minutes.

Add soaked apricots (with vinegar), stir well. Also add jaggery powder or brown sugar.

Pour in water, cover and simmer until mutton is tender. Or alternatively pressure cook everything until done.

Adjust seasoning, cook uncovered to thicken gravy if needed. Consistency can be adjusted to a desired level. Dish out to experience a great dish alongside both Rice and Rotis. Enjoy!
Tips
For extra flavour, you can marinate the mutton in spices for a few hours before cooking. It's absolutely optional.
