  1. 2 piecesSalmon fillets
  2. 1 tbspSofrito
  3. 1–2 cloves Garlic (minced)
  4. 1 tspCoconut aminos
  5. 0.5 tspVegan Chicken Salt Red Pepper Jada Seasoning
  6. 0.5 tspSazon Badia Everything Seasoning
  7. 0.5 tspOnion powder
  8. 0.5 tspSalt
  9. drizzle Olive oil
  10. 3 tbspGuava paste
  11. 2 tbspKetchup
  12. 0.5 tspCumin
  13. 1 tbspMinced garlic
  14. dashChicken bouillon
  15. 1 tbspRed wine vinegar
  16. 0.5 tspPepper
  17. splash(to thin, as needed) Water
  18. as neededTostones
  19. as neededMicro broccoli

Steps

    Mix garlic, sofrito, seasonings, salt, pepper, and olive oil into a paste.

  2. 2

    Rub paste over salmon fillets and refrigerate for 30 minutes.

  3. 3

    Preheat oven to 385°F (195°C). Place salmon on parchment-lined tray.

  4. 4

    Bake for 20–25 minutes until crisp outside and flaky inside.

  5. 5

    For glaze, melt guava paste with water over low heat. Add ketchup, vinegar, coconut aminos, garlic, onion powder, cumin, and bouillon. Simmer 5–7 minutes, blend if needed.

  6. 6

    Brush glaze on salmon after baking for a shiny finish.

  7. 7

    Plate salmon, drizzle extra glaze, garnish with micro broccoli, and serve with tostones.
