Mix garlic, sofrito, seasonings, salt, pepper, and olive oil into a paste.

Rub paste over salmon fillets and refrigerate for 30 minutes.

Preheat oven to 385°F (195°C). Place salmon on parchment-lined tray.

Bake for 20–25 minutes until crisp outside and flaky inside.

For glaze, melt guava paste with water over low heat. Add ketchup, vinegar, coconut aminos, garlic, onion powder, cumin, and bouillon. Simmer 5–7 minutes, blend if needed.
