Cook basmati rice using a 1:2 ratio of rice to water. Microwave for 6 minutes in two rounds. After the first round, fluff the rice with chopsticks, then microwave for the second round. (I used leftover rice from yesterday, stored in the fridge, which works great for fried rice.)

Chop all the vegetables and set aside. Mix the seasonings into the rice before stir-frying. Basmati rice is drier and less sticky than Thai jasmine rice, so you can mix the sauces in without making it mushy.

Summary: Garlic > Eggs > Sausage/Dried Fish > Rice > Veggies. Heat a pan over medium heat and add a little sesame oil (or use a bit of water for a lighter option). Sauté the chopped garlic until it starts to turn golden. Crack in the eggs and let them set slightly, then scramble into pieces—don’t overcook. Add the sausage (or other protein) and stir-fry until it starts to change color and release some oil. Add the dried fish and stir-fry until fragrant. Add the rice and stir to coat with the sauce. Finally, add the prepared vegetables and stir-fry until just cooked.

Serve on a plate, topped with cilantro and pepper. Add a squeeze of lime for extra flavor if you like.
