Ingredients

2 servings
  • 2potatoes, boiled
  • 1 cupchickpeas, boiled
  • 1/2 cupolives, pitted
  • 1/2red onion, sliced
  • 1/2cucumber, chopped
  • 1/4 cupcherry tomatoes, halved
  • 3 tbsp.cilantro, chopped
  • 1/3 cupolive oil
  • 1/4 cupvinegar
  • 1 tsp.dried oregano
  • To taste, salt
  • To taste, pepper powder
  • 1 tbsp.lemon juice
  • 1 tsp.lemon zest
  • 1 tbsp.feta cheese

Steps

30minutes
  1. 1

    Peel the boiled potatoes and cut them into chunks.

  2. 2

    In a bowl whisk together the olive oil, vinegar, lemon juice, salt lemon zest, oregano, and pepper.

  3. 3

    Add the potatoes to the dressing and gently toss.

  4. 4

    Add the remaining ingredients, except feta, and mix well.

  5. 5

    Add the feta just before serving.

  6. 6

    Serve at room temperature or chilled.
