Boil and mash the mixed vegetables, set aside.

Heat butter and oil in a pan, sauté onion and capsicum until soft.

Add ginger garlic paste, red chilli powder, and pav bhaji masala, cook until fragrant.

Add mashed vegetables, mix well and cook for a few minutes.

Fold in cheese cubes and sprinkle coriander leaves, mix until cheese melts.

Heat butter on a tawa, roast pav buns on both sides until golden.

Serve bhaji with buns, topped with grated cheese, chopped onion, and green chilli.
Tips
For extra flavor, you can add a squeeze of lemon juice before serving.
