Ingredients

  • For Vada:
  • 300 gmspotatoes
  • 1/2 tspginger-chilli paste
  • 2green chillies chopped
  • 3 tbspcoriander
  • 1/4 tsphaldi
  • 1/4 tspchilli powder
  • 1/2 tspdhaniajira powder
  • 1/2 tspgaram masala
  • 1/2 tspchat masala
  • 3/4 tspsalt
  • 2 tsptempering (1tsp oil 1/2 tsp each of rai and urad dal, 7-8 curry leaves chopped and 1/4 tsp hing
  • For Batter:
  • 1 1/2 cupssieved besan
  • 2 tsprice flour
  • 1/2 tspajwain
  • 3/4 tspsalt
  • 1/4 tsphing
  • 1/8 tspsoda
  • 1 tsphot oil
  • Other Accompaniments:
  • 16 piecesLaadi pav
  • 3 tbspbutter
  • 4-5 tbspgreen chutney
  • 4-5 tspgarlic chutney
  • 3-4cheese slices(optional)
  • 3-4 tbspMaharashtra groundnut dry chutney
  • Other Ingredients:
  • 2 cupsoil for deep fry

Steps

    First, ready the ingredients for vadas. Boil the potatoes, mash mix in all masalas and tempering and form flat shaped vadas. (This time I missed to click the relavant pictures, please don't mind)

    Ready all the batter ingredients. Mix all the dry ingredients except soda and adding water in small batches, mix to form a lumpfree batter.

    Mix the batter vigorously for 3-4 minutes until light and aeration takes place in it. Rest the batter for 30 minutes. Heat oil for deep fry. Add soda and 1tsp hot oil on top of the soda. Mix vigorously.

    Deep fry the vadas in medium hot oil. Fry crispy. For assembling the Vada pav: Cut pav and apply butter.

    Apply green chutney and garlic chutney. Place hot fried vada and close the pav.

    Serve this Chhota packet of Lip smacking flavours with hot tea.
