We turned rotisserie chicken from the corner store into something different. Eating green vegetables is good for your health. Let’s eat healthy, super affordable, and delicious!

Boil the black nightshade greens (hierba mora). Once cooked, squeeze out excess water and chop finely. Reserve the cooking water for later.

Peel the chayote squash and dice it small. Sauté a chopped garlic clove in oil, then add the chayote. When it starts to dry out, add a little of the reserved greens cooking water, a bit at a time.

Meanwhile, shred the rotisserie chicken into small pieces. In a separate pan, sauté the chicken with a garlic clove and a little oil until browned.

Combine the chayote and greens in the first pan.

Add the chicken. Season with salt, pepper, and chili pepper to taste. Enjoy!
