Ingredients

20-25 minutes
5-6 servings
  1. 800 gmfinely chopped Potatoes
  2. 2-3 tbspCoconut Oil
  3. 1-2dry Red Chillies
  4. 1 tspBengal Gram or Chana Daal
  5. 1 tspBlack Gram or Urad Daal
  6. 1 tspBlack Mustard Seeds
  7. 2 sprigsCurry Leaves
  8. 1finely chopped Onion
  9. 1 tspminced Garlic
  10. 1/2 tspTurmeric powder
  11. 1 tspSalt
  12. 1 tspKashmiri Red Chilli powder
  13. 1 tbspJaggery
  14. 3-4 tbspfreshly shredded Coconut

Steps

20-25 minutes
  1. 1

    Heat coconut oil in a pan. Add mustard seeds and let them splutter. Also add bengal gram and black gram both.

  2. 2

    Add curry leaves, dry red chillies and green chillies. Saute for a few seconds.

    Add chopped onion and saute until translucent.

    Add finely chopped potatoes, kashmiri red chilli powder, turmeric powder and salt. Mix well.

    Cover and cook on a low heat until potatoes are tender, stirring occasionally.

    Finish by adding freshly grated jaggery and coconut. Mix and cook for 1 more minute. Garnish with chopped coriander leaves. Serve hot alongside steamed Rice and Rotis both. Enjoy!
