Kheel is a type of Puffed Rice made from Paddy (Rice with the husk) that is heated until it puffs up. The heating process is done at a high temperature often in Sand or Salt which causes the grain to expand into a light crunchy snack. The innovative twist to the original Poha dish. This is just perfect.

Steps

Wash, rinse and drain the kheel once or twice. Do not soak it. Rinse and drain immediately. Keep aside until use.

Meanwhile heat oil in a kadhai or a pan. Saute onions and chopped ginger. Then add peanuts and curry leaves. Saute on a low heat until the raw smell fades away.

Add green chillies, salt and turmeric now. And finally the kheel or the husked flattened rice. Mix well and squeeze some lemon juice onto it. Garnish with coriander leaves.

Serve it piping hot right away. Enjoy!
